Jennifer Bolton has a Ph.D. in Dietetics and Nutrition and a Bachelor of Arts in Liberal Arts and Sciences and Honors Biology. Her previous research involved aging and genetics in budding yeast, and health behavior change in adults with Intellectual Disabilities in the community. Jennifer’s dissertation research was under Dr. Cristina Palacios at the Florida International University in Miami. She worked in collaboration with the Computer Science Program on the Baby-Feed web application for healthcare providers and parents to improve diet quality in infants and toddlers. This innovative research was focused on nutrition assessment, technology, and early childhood obesity prevention in the healthcare setting. Jennifer is bilingual in English and Spanish and has experience working in hospital pharmacy and government procurement. In the Fall, she will be working as an Inpatient Clinical Dietitian at the United States Department of Veterans Affairs in Miami and is interested in continuing to develop evidence-based nutrition programs at the local and national levels.
