Kenny Mendoza holds a BS degree in Nutritional Sciences and completed his Master of Nutritional Science at the Mexican National Institute of Public Health (INSP). He is currently a Ph.D. candidate in Nutritional Epidemiology and a master’s student in Biostatistics in the Nutrition Department at the Harvard T.H. Chan School of Public Health. Kenny has been the recipient of several international awards and fellowships, including First Place in the 2017 Student Research Paper Contest by the Centers for Disease Control and Prevention (CDC), the Fulbright language scholarship, First Place in the 2022 Young Minority Investigator Oral Competition by the American Society for Nutrition (ASN), and the 2023 ASN Predoctoral Fellowship. He participates as a Finalist in the 2023 ASN Emerging Leaders in Nutrition Science Poster Competition. Currently, Kenny’s research focuses on exploring the role of ultra-processed foods, traditional diets, and other eating behaviors in metabolic disturbance and the development of obesity, diabetes, and cardiovascular disease in the Hispanic/Latino population and other major racial/ethnic groups inside and outside the US.
