Dr. Kristen Hicks-Roof is the Director of Human Nutrition Research at the National Pork Board, where she plans to expand the nutrition research portfolio to highlight why and how pork can provide nutritional benefit to a person. Previously, Dr. Hicks-Roof was an Associate Professor at the University of North Florida focused on interprofessional education. Dr. Hicks-Roof is a Registered Dietitian who is focused on inclusive dietary patterns and advocating for the role of a Registered Dietitian on the interprofessional team.
