Min-Hyun Kim, PhD, is an assistant professor of nutrition at Arizona State University. He investigates the molecular mechanisms of obesity and diabetes. Using mouse and cell culture models, Kim's lab investigates how various diets (high-calorie diets, calorie restriction, and single nutrients) influence the epigenetic modifications of obesity-related genes that can lead to the development of metabolic syndrome. Additionally, they study how diets regulate signaling pathways of metabolic hormones that control body weight, such as leptin, GLP-1, and insulin. Before joining the faculty at Arizona State University in 2022, Kim was a postdoctoral fellow at the University of Michigan Medical School, where he studied the epigenetic regulation of leptin signaling pathways. Kim's research projects have been published in high-impact journals, including the Journal of Clinical Investigation and Proceedings of the National Academy of Sciences, and he is a past winner of the American Society for Nutrition's Graduate Student Research Award Competition.
