Dr. Emily Hill is a Registered Dietitian Nutritionist and Postdoctoral Fellow at The University of Colorado Anschutz Medical Campus. Her research interest centers on the need to more precisely define the relationship between dietary intakes and cardiometabolic health within the context of obesity and cancer. Dr. Hill has worked on several clinical trials aimed at improving overall diet quality and/or intakes of key food groups, with a focus on examining changes in dietary intake patterns, biomarkers of fruit and vegetable exposure, and integration of -omics (e.g., proteomics, metabolomics, microbiome) to evaluate and predict response to intervention. Her current project results from her T32 research fellowship, where she worked with a collaborative and multidisciplinary team to apply a novel step-wise “foodomics” strategy for the identification and evaluation of food-specific compounds (FSCs) consumed within healthy dietary patterns to define FSCs that are recoverable in human biospecimens and are associated with cardiometabolic health. Her abstract, Food-specific Compounds Act as Putative Biomarkers for Exposure to and Effect of Plant Foods Consumed within a Mediterranean Diet Intervention, has been selected for oral presentation at ASN’s Nutrition 2023, where she is also competing in the Nutrition Translation Award Competition and the Emerging Leaders in Nutrition Science Poster Competition. She was recognized for additional “foodomics” work at the 2023 Metabolomics Society meeting, where she was the recipient of the Metabolomics Association of North America Early Career Member Travel Award.
