Rachel Van Duinen is a Food Science master's student at Michigan State University. She earned her B.S. in Nutritional Sciences and Human Biology in May 2023, also from Michigan State University. During her undergraduate degree, she began training on GC-MS analysis of fatty acids and is now continuing her role as a graduate research assistant evaluating seasonal impacts on the nutrient profile of pasture-raised eggs. In addition to her research, Rachel is responsible for executing fatty acid analysis for partnered projects with the University of North Carolina and UCLA and repairing and maintaining the department GC-MS. In her time at Michigan State, she has helped as a learning assistant for multiple courses related to nutrition metabolism and research methodology. She is currently a member of the American Society for Nutrition. Ms. Van Duinen enjoys participating in volunteer work leading peer discussions relating to healthy body image, and is a member of the American Society for Nutrition. Her next goal is to pursue a Ph.D. program in Human Nutrition upon completing her master's in 2025.
