Dr. Archundia has a BSc in Human Nutrition, and a Masters degree in Medical Sciences from the University of Guanajuato (Guanajuato, Mexico). She completed her Ph.D. in Human Nutrition and Metabolism from the University of Alberta (Edmonton, AB. Canada), where she specialized as a nutrition and behaviour scientist with strong quantitative/qualitative research skills in the development, implementation, and evaluation of lifestyle programs for people living with diabetes.
Currently, she is completing her Postdoctoral training in Maternal and Child Nutrition funded by the Women and Children Health Research Institute (WCHRI) and is committed to a career of research in Maternal and Child Nutrition. Dr. Archundia’s current research interest is related to the interplay between micronutrients and health and hopes to better understand how changes in iron status throughout pregnancy relate to health outcomes. Dr. Archundia is part of the Alberta Pregnancy Outcomes and Nutrition (APrON) research group led by Dr. Rhonda C. Bell.
