Adwoa S. Dankwa, Ph.D., MS is a Postdoctoral Research Fellow at the University of Maine, Orono. Dr. Dankwa received her Ph.D. in food science with a focus on microbiology from the University of Maine, Orono. Her dissertation studies focused on the safety assessment and standardization of fermentation cycles of kombucha and water kefir to help stabilize and reproduce the fermented product as well as preserve the quality to maximize their promising health benefits. Dr. Dankwa is currently working on the identification of Vibrio species in sea scallop hatcheries to explore their association with the health and viability of scallops in production.
