Dr. Chelsey Fiecke is a postdoctoral fellow working at the Arkansas Children’s Nutrition Center in Little Rock, AR. She has a Bachelor’s degree in Biology from the University of Northwestern in St. Paul, MN and a PhD in Nutritional Biochemistry from the University of Minnesota. During her PhD, awarded in 2021, Chelsey investigated the effects of green tea and red wheat on oxidative stress, gut microbiome composition, and markers of colon cancer risk. During her postdoctoral research, Chelsey has continued to focus on phenolic-rich dietary components, including investigations of food matrix interactions that influence (poly)phenol stability, bioavailability, and functional properties in foods. Chelsey also has interests in host factors (e.g., gut microbiome composition, health status, dietary patterns), that impact polyphenol bioavailability and inter-individual variability in health outcome responses to phenolic-rich dietary components.
