Simone Dunne is a final year PhD candidate at University College Dublin, where she works in the Food for Health Ireland Healthy Cheeses work package. Simone graduated with a BSc in Nutrition and Health Science in 2017 and was awarded the Nutritics ‘Best final year project 2016/17’ prize. Following graduation, she worked as a nutrition fieldworker with the Childhood Obesity Surveillance Initiative (COSI), run by the National Nutrition Surveillance Centre in UCD. She then moved to a research assistant role on the Food for Health Ireland, Healthy Cheese project, based in the Institute of Food and Health at UCD, before pursuing a PhD in the same project, investigating the role of the food matrix within dairy fat and metabolic health, under the supervision of Dr Emma Feeney, Prof Eileen Gibney and Dr Fiona McGillicuddy. Earlier this summer, Simone won the Irish Nutrition Society Postgraduate Competition and will now have the opportunity to have her literature review published in 'The Proceedings of the Nutrition Society'. Simone’s research interests lie in the areas of novel cardiovascular biomarkers, particularly lipoprotein subclasses and their role as more sensitive markers of disease risk.
