Yu Zhang is currently serving as a Professor, Head of Laboratory of Food Safety and Human Health and Associate Director of Research Institute of Food Processing and Engineering in Zhejiang University, China. He received his B.S. degree in Food Science and Engineering from Zhejiang University, Hangzhou, China, in 2003 and Ph.D. (Food Science) degree from the same University in 2008. After serving as a Postdoctoral and Research Fellow at Harvard University School of Medicine and Massachusetts General Hospital, he took an Associate professor position in the Department of Food Science and Nutrition at Zhejiang University in 2011, and he was promoted to Professor in 2017. Currently, he teaches several graduate and MSc courses including Current Knowledge in Food Safety, Current Knowledge in Food Science, and Professional English and Scientific Paper Writing. He was selected as one of the top young talents in the China National Ten Thousand Talents Plan. He is principal investigator of 6 national-level projects such as the National Key Research and Development Project in the field of food safety and general programs of National Natural Science Foundation of China. He is nominated as winner of Young Chemist Award of International Pure and Applied Chemistry Association (IUPAC), Outstanding Young Scholar Award of Chinese Institute of Food Science and Technology, Outstanding Scholar Science and Technology Award of Chinese Society of Toxicology, and Outstanding Young Scientist Award of Chinese Nutrition Society. He is committee members of Analytical Toxicology Special Committee of the Chinese Society of Toxicology and the Ecological Health and Human Ecology Special Committee of the Chinese Society of Ecology. He is also editorial board members of Food Science and Biotechnology, Chinese Journal of Food Hygiene, Journal of Food Safety and Quality, etc. The research results have been presented and published at more than 120 peer-reviewed scientific journal articles such as PNAS, Comprehensive Reviews in Food Science and Food Safety, Chemical Reviews, Journal of Agricultural and Food Chemistry, Microbiome, Journal of Hazardous Materials, etc., with more than 5500 citations and h-index 40. His main research interest is the analytical chemistry, formation and mitigation, hazardous control, risk assessment, and health effect of food processing contaminants.
