Edward Moncada, born and raised in Tegucigalpa, Honduras, is a current PhD student in Food Science at Purdue University. He obtained his BSc in Zamorano University, Honduras, and in his senior year, Edward completed an internship at Purdue, opening the doors to start his graduate degree in 2021. He is part of the Functional Foods for Health Lab under the supervision of Dr. Lavanya Reddivari, in which his current research includes working with dietary fibers and their role in gut health, focused on improving fiber tolerance for individuals diagnosed with Ulcerative Colitis. Edward also studies polyphenol-polysaccharide interactions in whole foods and their role in starch absorption and fiber fermentation. With his research, Edward hopes to contribute to the fields that he's passionate about, food and human health.
