My name is Daniel Do, I have a BS in chemistry and biochemistry from Stockton University (Galloway, NJ) and I am currently pursuing my PhD in Food Science and Technology at The Ohio State University under the guidance of Dr. Jessica Cooperstone. In our lab, we seek to understand how phytochemicals contribute to human health and I am particularly interested in a class of compounds called steroidal alkaloids found in tomatoes. My research is focused on elucidating their in vivo relevance, that is to understand their absorption, metabolism, accumulation, and bioefficacy through the use of techniques in analytical chemistry and molecular biology. With my research, I hope to advance the movement of testing the potential benefit of phytochemicals in humans through the clinic.
