Marcela Radtke, PhD is a recent graduate from the University of California, Davis studying nutritional biology with an emphasis in cognitive neuroscience. Her research focuses on the physiological and cognitive outcomes associated with the experience of food insecurity. Using innovative assessment tools for measuring clinical biomarkers and dietary intake, Marcela has completed multiple human clinical trials using carotenoids as a biomarker for diet quality, along with pressure-mediated reflection spectroscopy, Diet ID™, repeated 24-hour NDSR dietary recalls, and assessments of executive function.
