Karen Corleto started her training at the University of Houston with a Bachelor’s degree in Human Nutrition and Foods, where her passion for nutrition and its impact on human health began. She then completed a Master’s in Nutrition at Texas A&M University, focusing on the analysis and stability of plant bioactive components with vasodilatory properties. Currently, Karen is pursuing a Ph.D. in Nutrition; her research focuses on how obesity affects cancer cell metabolism and the effects of therapeutics on tumors utilizing cell culture and animal models. Her long-term goal is to work in translational nutrition research focusing on the impact of diet on chronic disease risk and progression.
