Objectives: While fresh fruits and vegetables are healthy food, their short shelf life and associated loss of nutrition value due to microbial-induced spoilage are significant problems. This study aims to create an edible coating for strawberries that utilizes the strong antimicrobial properties of phytochemicals encapsulated in nanoparticles (NPs), which will overcome these issues and provide multiple functions.

Methods: In this study, we developed and characterized a biodegradable and biocompatible trans-resveratrol (R)-encapsulated lipid-based NP (RNP) delivery system. Afterward, the dip-coating solution was developed by incorporating RNPs with chitosan (CS) film matrix, and their antimicrobial activity against common foodborne pathogens was evaluated. Finally, the functions of edible coatings on strawberry quality, nutrient maintenance, and shelf life during storage were investigated.

Results: The RNPs were prepared in a modified sonication process, resulting in an average diameter below 100 nm. The R encapsulation efficiency was all above 90%. RNPs significantly increased the aqueous solubility of R by 150 folds and bioavailability by 3.5 folds after oral administration to rats. The encapsulated R in RNPs exhibited significant antimicrobial activity against S. enteritidis, L. monocytogenes, E. coli, and S. aureus. Our results demonstrated the abilities of the RNPs-embedded CS edible coating to extend strawberries’ shelf life during storage at both 22 and 4 °C. Furthermore, the RNPs-embedded CS coatings effectively protected strawberry nutrients from degradation and oxidation.

Conclusions: The RNPs-CS edible film can inhibit microbial growth, reduce dehydration and texture deterioration, and deliver R as an alternative supplement. Such an edible coating has great potential in the fields of perishable fruit preservation and supplement delivery.
