(P06-026-23) Macronutrient Contents in Wet Catfish Noodle Products an Alternative of Stunting Children Food Supplementary

Objectives: The stunting problem among toddlers in Indonesia still exists, even in the most populous island of East Java. In this study, Gresik Regency with a higher stunting prevalence rate than the province’s stunting prevalence rate showed that one of the causes of stunting is underintake of nutrients over a long period of time. The stunting nutrition intervention program includes providing energy- and protein-dense supplementary food for the community. Wet catfish noodles utilization can optimize food access by utilizing local food, including catfish (Clarias gariepinus) and its processed products. Therefore, this study aimed to analyze the macronutrient content in wet catfish noodle products.

Methods: This study analyzed the content of macronutrients in the laboratory of Nutrition, then further analyzed the differences in macronutrient contents using an independent t-test.

Results: The content of protein and fat in catfish noodles (protein: 13.42%; fat: 2.78%) is indeed lower than fresh catfish meat (protein: 17.19%; fat: 5.89%), but the content of carbohydrates and calories in catfish noodles (carbohydrates: 71.56%; calories: 364.94 Kcal) are higher than fresh catfish meat (carbohydrates: 5.55%; calories: 143.97 Kcal).

Conclusions: The wet catfish noodles' macronutrient contents are high in calories, carbohydrates, sufficient protein and fat, and safe, which is expected to be one of the additional food solutions for stunting toddlers.
